These are cookies for rookies, they always come out right and are delicious, I made them with violet flavor, my favorite flower, taste and color. I also made them to contradict The Stems: At first sight violets are (not) blue.
Anyway, as variety is the spice of life, these cookies can be made using rose, strawberry, raspberry, cherry, coconut or just lemon flavor: you only have to substitute the violet paste tablespoon in the recipe for the same amount of lemon zest, and the aroma for some juice.
Let’s go for the ingredients:
– 100 grams of butter
– 200 grams of sugar
– 1 tsp. of good quality vanilla
– 1 tsp. of violet flavor
– Food coloring: (I used violet and electric purple from Americolor)
– 1 tbsp. violet paste
– 1 egg (S)
– 175 grams of cake flour
– Icing sugar.
– A pinch of salt
Preheat the oven to 180ºC. Mix sugar, salt and butter until light and fluffy. Add violet paste and aroma and the vanilla. After that, add the egg. When the mixture is well incorporated and smooth we add the flour. How do we do it? Carefully, as usual, it doesn’t matter if we’re using any kitchen robot or if we are hand mixing.
The result is a sticky and difficult to work with dough, so we will use a 15 ml measuring spoon so all our cookies are equal in size. We fill the spoon to the brim and with our fingers covered in icing sugar, take all the dough out, then we bathe the hand holding the spoon with more icing sugar and form a small ball, repeating this process up to 24 times. We will bake them in batches of 12 with our super BRA lidded tray pan for 10 minutes.
What if we don’t have this super BRA tray? Then we bake them on a normal oven tray, they will still be moist, but they will look slightly different.
Note: I use violet paste and flavor in order to get the violet taste with two hints: floral and caramelized. The combination is irresistible. You can smell the cookies right after opening the tin, and when you taste them, they are absolutely delicate and intense.
